Ingredients

- 1 package of Trader Joe’s Cauliflower Gnocchi
- 1 jar of Trader Joe’s Pesto
- 1 bag of Trader Joe’s Baby Spinach
- 1 cup of Trader Joe’s Cherry Tomatoes, halved
- 1 package of Trader Joe’s Grilled Chicken Strips
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- In a skillet, heat the olive oil over medium heat.
- Add the cauliflower gnocchi and cook until they are golden brown and heated through, about 5-7 minutes.
- Add the grilled chicken strips to the skillet and cook for an additional 2-3 minutes until warmed.
- Stir in the cherry tomatoes and baby spinach, cooking until the spinach wilts.
- Pour in the pesto and mix until everything is well coated. Cook for another minute.
- Season with salt and pepper to taste.
- Serve warm, topped with Parmesan cheese if desired.
Notes
- You can substitute the grilled chicken strips with any protein of your choice.
- Feel free to add additional vegetables such as bell peppers or zucchini for more nutrition.
