  • 1 cup of Trader Joe’s Cherry Tomatoes, halved
  • 1 package of Trader Joe’s Grilled Chicken Strips
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. In a skillet, heat the olive oil over medium heat.
  2. Add the cauliflower gnocchi and cook until they are golden brown and heated through, about 5-7 minutes.
  3. Add the grilled chicken strips to the skillet and cook for an additional 2-3 minutes until warmed.
  4. Stir in the cherry tomatoes and baby spinach, cooking until the spinach wilts.
  5. Pour in the pesto and mix until everything is well coated. Cook for another minute.
  6. Season with salt and pepper to taste.
