- 4 cups sweet potatoes
- 1 cup brown sugar
- 1/2 cup milk
- 1/2 cup butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup pecans
- 1/2 cup oats
- 1/4 cup additional brown sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, beaten eggs, vanilla extract, cinnamon, and salt. Mix until smooth.
- Spread the sweet potato mixture evenly in a greased 9×13 inch baking dish.
- In a separate bowl, mix the chopped pecans, oats, and additional brown sugar.
- Sprinkle the pecan mixture over the sweet potato layer.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
- For a sweeter casserole, adjust the brown sugar to taste.
- You can prepare the sweet potato mixture a day in advance and store it in the fridge until ready to bake.
