A delicious and easy sweet potato casserole topped with a crunchy pecan streusel. Perfect for holiday gatherings!


Ingredients

  • 4 cups sweet potatoes
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup pecans
  • 1/2 cup oats
  • 1/4 cup additional brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, beaten eggs, vanilla extract, cinnamon, and salt. Mix until smooth.
  3. Spread the sweet potato mixture evenly in a greased 9×13 inch baking dish.
  4. In a separate bowl, mix the chopped pecans, oats, and additional brown sugar.
  5. Sprinkle the pecan mixture over the sweet potato layer.
  6. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown.
  7. Remove from the oven and let cool slightly before serving.

Notes

  • For a sweeter casserole, adjust the brown sugar to taste.
  • You can prepare the sweet potato mixture a day in advance and store it in the fridge until ready to bake.
