Ingredients

- 2 cups of fresh vegetables (zucchini, bell peppers, cherry tomatoes)
- 1 cup of cooked quinoa
- 1 can of black beans, drained
- 1/4 cup of olive oil
- 1 tsp of cumin
- Salt and pepper to taste
- Fresh herbs for garnish (cilantro or parsley)
Instructions
- Preheat grill to medium-high heat.
- Chop vegetables into bite-sized pieces.
- In a bowl, mix quinoa, black beans, and vegetables.
- Add olive oil, cumin, salt, and pepper. Toss to combine.
- Place mixture in a grill basket and grill for 10-15 minutes.
- Remove from grill and garnish with fresh herbs.
Notes
- Feel free to substitute vegetables based on your preference.
- This meal is great served cold as a salad.
- Store leftovers in the refrigerator for up to 3 days.
