Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. In a medium saucepan, combine the sliced strawberries, sugar, and lemon juice. Stir gently to combine and let sit for about 10 minutes to allow the strawberries to release their juices.
  2. In a small bowl, mix the cornstarch with the water until smooth. Add this mixture to the strawberries in the saucepan.
  3. Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly until the sauce thickens, about 5-7 minutes.
  4. Remove from heat and stir in the vanilla extract if using. Let the topping cool to room temperature before serving over cheesecake.

Notes

  • This topping can be made ahead of time and stored in the refrigerator for up to 3 days.
