This easy strawberry topping is the perfect accompaniment to your cheesecake. It’s sweet, glossy, and adds a burst of flavor to every slice.

- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/4 cup water
- 1/2 teaspoon vanilla extract (optional)
Instructions
- In a medium saucepan, combine the sliced strawberries, sugar, and lemon juice. Stir gently to combine and let sit for about 10 minutes to allow the strawberries to release their juices.
- In a small bowl, mix the cornstarch with the water until smooth. Add this mixture to the strawberries in the saucepan.
- Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly until the sauce thickens, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract if using. Let the topping cool to room temperature before serving over cheesecake.
Notes
- This topping can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a smoother sauce, you can blend the mixture after it has cooled slightly.
