- 2 cups fresh strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, and vanilla extract. Mix well and set aside.
- In another bowl, combine the rolled oats, flour, brown sugar, and ground cinnamon. Stir in the melted butter until the mixture is crumbly.
- Spread the fruit mixture evenly in a greased baking dish.
- Sprinkle the oat mixture evenly over the top of the fruit.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the fruit is bubbling.
