- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup diced strawberries
- 1 cup diced rhubarb
- 1/2 cup brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/4 teaspoon cinnamon
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a mixing bowl, combine the flour, granulated sugar, and salt. Stir in the melted butter until the mixture is crumbly.
- Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
- In another bowl, mix together the strawberries, rhubarb, brown sugar, cornstarch, vanilla extract, lemon juice, and cinnamon until well combined.
- Spread the fruit mixture evenly over the crust in the baking dish.
- Bake for 30-35 minutes, or until the fruit is bubbling and the crust is lightly golden.
- Allow to cool completely in the pan before cutting into bars. Dust with powdered sugar before serving if desired.
Notes
- For the best flavor, use fresh strawberries and rhubarb when in season.
- These bars can be stored in an airtight container in the refrigerator for up to 5 days.
