  • 1 cup diced strawberries
  • 1 cup diced rhubarb
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cinnamon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a mixing bowl, combine the flour, granulated sugar, and salt. Stir in the melted butter until the mixture is crumbly.
  3. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, mix together the strawberries, rhubarb, brown sugar, cornstarch, vanilla extract, lemon juice, and cinnamon until well combined.
  5. Spread the fruit mixture evenly over the crust in the baking dish.
  6. Bake for 30-35 minutes, or until the fruit is bubbling and the crust is lightly golden.
  7. Allow to cool completely in the pan before cutting into bars. Dust with powdered sugar before serving if desired.
