- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
- In a large bowl, combine spinach, cherry tomatoes, and feta cheese.
- Once quinoa is cooked, fluff with a fork and let it cool slightly.
- Add quinoa to the bowl with vegetables.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper. Toss gently to combine.
- Serve immediately or chill before serving.
Notes
- This dish is best served fresh.
- You can add other vegetables as desired.
- Store leftovers in an airtight container in the fridge.
