Ingredients

Instructions

  1. In a pot, bring vegetable broth to a boil.
  2. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes.
  3. In a large bowl, combine spinach, cherry tomatoes, and feta cheese.
  4. Once quinoa is cooked, fluff with a fork and let it cool slightly.
  5. Add quinoa to the bowl with vegetables.
  6. Drizzle with olive oil and lemon juice.
  7. Season with salt and pepper. Toss gently to combine.
  8. Serve immediately or chill before serving.
