Ingredients
- Corn on the cob
- Coleslaw mix
- Cherry tomatoes, halved
- Cucumber, diced
- Fresh parsley, chopped
- Olive oil
- Lemon juice
- Salt
- Pepper
Instructions
- Boil corn on the cob in salted water for 5-7 minutes until tender. Remove and let cool.
- In a large bowl, combine coleslaw mix, cherry tomatoes, cucumber, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Cut corn off the cob and mix into the salad or serve separately.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables or ingredients such as bell peppers, onions, or feta cheese to the salad.
- This dish can be made a day in advance for easy meal prep.
