- 4 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped rhubarb, granulated sugar, 2 tablespoons of flour, and lemon juice. Mix well until the rhubarb is coated. Pour the mixture into a greased 9×13 inch baking dish.
- In another bowl, mix together the rolled oats, 1 cup of flour, brown sugar, and ground cinnamon. Stir in the melted butter until crumbly.
- Spread the oat mixture evenly over the rhubarb layer in the baking dish.
- Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the rhubarb is bubbly.
- Let cool slightly before serving. Enjoy warm with ice cream or cool with whipped cream.
