Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the chopped rhubarb, granulated sugar, 1 tablespoon flour, and vanilla extract. Mix well and pour into a greased 9×13 inch baking dish.
- In another bowl, mix together the rolled oats, 1 cup flour, brown sugar, melted butter, and cinnamon until crumbly.
- Sprinkle the oat mixture evenly over the rhubarb layer.
- Bake for 35-40 minutes or until the topping is golden brown and the rhubarb is bubbling.
