- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the chopped rhubarb, granulated sugar, cornstarch, and vanilla extract. Mix well and pour into a greased 9×13 inch baking dish.
- In another bowl, mix together the rolled oats, flour, ground cinnamon, brown sugar, and melted butter until crumbly.
- Sprinkle the oat mixture evenly over the rhubarb layer in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the rhubarb is bubbling.
- Let cool slightly before serving. Enjoy warm with ice cream or whipped cream!
