Instructions
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the shredded cheese and diced vegetables.
- Heat a non-stick skillet over medium heat and melt a little butter.
- Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are set, about 5-7 minutes.
- While the eggs are cooking, toast the bread slices in a toaster or on a skillet until golden brown.
- Once the eggs are cooked, assemble the breakfast by placing a slice of toast on each plate, topping it with the scrambled eggs, and serving with fresh fruit on the side.
- Brew some coffee or tea and serve it alongside the breakfast.
