- 1/2 cup fresh cilantro, chopped
- 1 lime juiced
Instructions
- In a pot, heat the olive oil over medium heat. Add rice and toast for about 2 minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- Add black beans, corn, cumin, chili powder, and garlic powder. Stir to combine and cook for an additional 5 minutes.
- Remove from heat and stir in lime juice and chopped cilantro.
- Serve warm or let cool and package for delivery.
