A quick and easy low carb meal featuring fresh zucchini noodles tossed in homemade pesto.
Ingredients

- 4 medium zucchinis, spiralized
- 1 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 2 cloves garlic
- 1/2 cup olive oil
- Salt and pepper to taste
- Cherry tomatoes for garnish (optional)
Instructions
- In a food processor, combine basil, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped.
- With the processor running, slowly add olive oil until the mixture is smooth. Season with salt and pepper to taste.
- In a large skillet over medium heat, add the spiralized zucchini noodles. Sauté for 2-3 minutes until slightly softened.
- Remove from heat and toss the zucchini noodles with the pesto until well coated.
- Serve immediately, garnished with cherry tomatoes if desired.
