- 1 cup dried lentils, rinsed and drained
- 4 cups vegetable broth
- 2 cups fresh spinach, chopped
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lemon (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Add minced garlic, cumin, and paprika to the pot. Cook for another 1-2 minutes until fragrant.
- Stir in the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes, or until lentils are tender.
- Add chopped spinach to the pot and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste. If desired, stir in lemon juice before serving.
