  • 4 cups vegetable broth
  • 2 cups fresh spinach, chopped
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lemon (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add minced garlic, cumin, and paprika to the pot. Cook for another 1-2 minutes until fragrant.
  3. Stir in the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes, or until lentils are tender.
  4. Add chopped spinach to the pot and cook for an additional 5 minutes until wilted.
  5. Season with salt and pepper to taste. If desired, stir in lemon juice before serving.
