- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 (24 oz) jar marinara sauce
- 1 (14.5 oz) can diced tomatoes
- 2 tsp Italian seasoning
- 8 lasagna noodles, broken into pieces
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Brown the ground beef in a large pot over medium heat. Drain excess fat.
- Add the diced onion and cook for 5 minutes until softened. Add the garlic and cook for 1 more minute.
- Pour in the beef broth, marinara sauce, and diced tomatoes. Stir in the Italian seasoning. Bring to a boil.
- Add the broken lasagna noodles. Reduce heat and simmer for 20 minutes, or until noodles are tender.
- Stir in the heavy cream. Season with salt and pepper.
- Ladle the soup into bowls. Top with mozzarella and Parmesan cheese. Garnish with fresh basil.
Notes
- For a lighter version, use ground turkey and low-fat cheese.
- You can prepare this soup ahead of time and reheat it before serving.
- The noodles will continue to absorb liquid as the soup sits. Add more broth when reheating leftovers.
