- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add the onion and garlic, cook until softened.
- Stir in the crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then add the broken lasagna noodles.
- Simmer for 15-20 minutes until noodles are tender.
- In a bowl, mix ricotta and Parmesan cheese.
- Serve the soup hot, topped with a dollop of the cheese mixture, shredded mozzarella, and fresh basil.
Notes
- For a vegetarian version, substitute ground beef with mushrooms or lentils.
- Store leftovers in an airtight container for up to 3 days.
- Freeze without cheese toppings for longer storage.
