Description
A hearty and flavorful lasagna soup made in a crockpot, combining the classic flavors of lasagna with the convenience of a slow cooker.

- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 4 cups beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add diced onion and minced garlic. Cook until onion is soft.
- Transfer beef mixture to the crockpot.
- Add crushed tomatoes, tomato sauce, beef broth, basil, oregano, salt, and pepper. Stir well.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- 30 minutes before serving, add broken lasagna noodles. Stir occasionally.
- Once noodles are tender, stir in ricotta cheese.
- Serve hot, topped with mozzarella, Parmesan, and fresh parsley.
Notes
- Use ground turkey for a leaner option.
- Add spinach or mushrooms for extra veggies.
- Store leftovers in an airtight container for up to 3 days.
