A hearty and flavorful beef stew made easily in a crockpot. Perfect for cold days and family dinners.
Ingredients

- 2 lbs beef stew meat, cubed
- 4 carrots, chopped
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp flour (optional, for thickening)
Instructions
- Place beef, carrots, potatoes, onion, and garlic in the crockpot.
- In a bowl, mix beef broth, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
- Pour the mixture over the ingredients in the crockpot.
- Cover and cook on low for 8 hours or high for 4 hours.
- If a thicker stew is desired, mix flour with a little water and stir into the stew 30 minutes before serving.
- Remove bay leaf before serving.
Notes
- For extra flavor, sear the beef before adding to the crockpot.
- Add other vegetables like celery or peas if desired.
- Store leftovers in an airtight container for up to 3 days.
