Ingredients

- 4 boneless, skinless chicken breasts
- 2 cups of chopped carrots
- 2 cups of chopped broccoli
- 1 cup of diced onions
- 3 cloves of garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup of low-sodium chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Place the chicken breasts at the bottom of the crock pot.
- Add the chopped carrots, broccoli, and diced onions on top of the chicken.
- In a separate bowl, mix together the minced garlic, diced tomatoes, chicken broth, oregano, thyme, salt, and pepper.
- Pour the mixture over the vegetables and chicken in the crock pot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Once done, shred the chicken with two forks and stir everything together before serving.
