Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups of chopped carrots
  • 2 cups of chopped broccoli
  • 1 cup of diced onions
  • 3 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup of low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the chopped carrots, broccoli, and diced onions on top of the chicken.
  3. In a separate bowl, mix together the minced garlic, diced tomatoes, chicken broth, oregano, thyme, salt, and pepper.
  4. Pour the mixture over the vegetables and chicken in the crock pot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
