Ingredients

  • 2 lbs boneless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Tortillas for serving
  • Sour cream and guacamole for topping

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the black beans, corn, salsa, and taco seasoning on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  4. Remove the chicken and shred it using two forks, then return it to the crockpot and stir to combine.
  5. Top with shredded cheese, cover, and let it sit for an additional 10-15 minutes until the cheese is melted.
  6. Serve in tortillas with sour cream and guacamole.
