- 2 lbs boneless chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- Tortillas for serving
- Sour cream and guacamole for topping
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the black beans, corn, salsa, and taco seasoning on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Remove the chicken and shred it using two forks, then return it to the crockpot and stir to combine.
- Top with shredded cheese, cover, and let it sit for an additional 10-15 minutes until the cheese is melted.
- Serve in tortillas with sour cream and guacamole.
Notes
- Feel free to add your favorite veggies like bell peppers or onions for more flavor.
- This recipe can easily be doubled to feed a larger crowd.
