Ingredients

  • 34 lbs chuck roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 cup beef broth
  • 2 onions, sliced
  • 3 carrots, chopped
  • 3 potatoes, cubed

Instructions

  1. Preheat oven to 325°F.
  2. Season chuck roast with salt, pepper, garlic powder, onion powder, and paprika.
  3. Heat olive oil in a large oven-safe pot over medium-high heat.
  4. Sear the roast on all sides until browned, about 4 minutes per side.
  5. Remove roast and add onions, carrots, and potatoes to the pot. Cook for 5 minutes.
  6. Place roast back in the pot and add beef broth.
  7. Cover and bake for 3-4 hours, until meat is tender.
  8. Let rest for 10 minutes before slicing.

Notes

  • For thicker gravy, mix 1 tbsp cornstarch with 2 tbsp water and stir into the pot juices after cooking.
