A simple and flavorful chuck roast recipe cooked in the oven for tender, juicy results.
Ingredients

- 3–4 lbs chuck roast
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 cup beef broth
- 2 onions, sliced
- 3 carrots, chopped
- 3 potatoes, cubed
Instructions
- Preheat oven to 325°F.
- Season chuck roast with salt, pepper, garlic powder, onion powder, and paprika.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Sear the roast on all sides until browned, about 4 minutes per side.
- Remove roast and add onions, carrots, and potatoes to the pot. Cook for 5 minutes.
- Place roast back in the pot and add beef broth.
- Cover and bake for 3-4 hours, until meat is tender.
- Let rest for 10 minutes before slicing.
Notes
- For thicker gravy, mix 1 tbsp cornstarch with 2 tbsp water and stir into the pot juices after cooking.
- You can substitute vegetables with your favorites.
