These easy cheesy potatoes are the perfect side dish for any meal. Creamy, cheesy, and loaded with flavor, they pair well with everything from grilled meats to holiday feasts.

- 2 pounds of potatoes (russet or Yukon gold), peeled and cubed
- 1 cup of shredded cheddar cheese
- 1 cup of sour cream
- 1/2 cup of milk
- 1/4 cup of butter, melted
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- 1/2 cup of chopped green onions (for garnish, optional)
- 1/2 cup of breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring salted water to a boil and add the cubed potatoes. Cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
- Add the melted butter, sour cream, milk, garlic powder, onion powder, salt, and pepper to the potatoes. Mash until creamy and well combined.
- Stir in the shredded cheddar cheese until melted and evenly distributed.
- Transfer the cheesy potato mixture to a greased baking dish. If desired, sprinkle breadcrumbs on top for added texture.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and garnish with chopped green onions if desired. Serve hot.
Notes
- Feel free to add other ingredients like cooked bacon, jalapeños, or different cheese varieties for extra flavor.
- These potatoes can be made ahead of time and stored in the refrigerator until ready to bake.
