A simple and delicious buckeyes recipe for peanut butter balls dipped in chocolate.
Ingredients

- 1 1/2 cups creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 3 1/2 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 1 tablespoon shortening
Instructions
- Mix peanut butter, butter, and vanilla in a bowl.
- Gradually add powdered sugar until fully combined.
- Roll into 1-inch balls and place on a baking sheet.
- Freeze for 30 minutes.
- Melt chocolate chips and shortening in a double boiler.
- Dip each ball into the chocolate, leaving a small circle uncovered.
- Place back on the baking sheet and refrigerate until set.
Notes
- Use a toothpick to dip the balls for easier handling.
- Store in an airtight container in the fridge.
