  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp flour

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onions, carrots, and garlic to the pot. Cook until softened.
  4. Stir in flour and tomato paste, coating the vegetables.
  5. Pour in beef broth and return the beef to the pot.
  6. Add potatoes, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  8. Serve hot.

Notes

  • For thicker stew, mix 1 tbsp cornstarch with water and stir in.
