A hearty beef stew made with tender beef chunks, vegetables, and rich broth.
Ingredients

- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp flour
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- Add onions, carrots, and garlic to the pot. Cook until softened.
- Stir in flour and tomato paste, coating the vegetables.
- Pour in beef broth and return the beef to the pot.
- Add potatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Serve hot.
Notes
- For thicker stew, mix 1 tbsp cornstarch with water and stir in.
- Store leftovers in an airtight container for up to 3 days.
