Ingredients

- 1 cup of rice
- 2 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 cup of mixed vegetables
- 1 cup of cooked chicken (optional)
- 2 tablespoons of soy sauce
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice, water, olive oil, and salt.
- Bring to a boil, then reduce heat and cover.
- Simmer for 18 minutes or until water is absorbed.
- In a separate pan, sauté mixed vegetables until tender.
- If using, add cooked chicken to the vegetables.
- Once rice is cooked, fluff with a fork and mix in vegetables and soy sauce.
- Serve hot and enjoy your meal.
Notes
- This meal can be made vegetarian by omitting chicken.
- Adjust the vegetables based on your preference.
- Use leftover rice for quicker preparation.
