- 1 pound Baby Carrots
- 4 cups Potatoes, diced
- 1 pound Green Beans, trimmed
- 1/2 cup Butter
- 4 cloves Garlic, minced
- 1 tablespoon each Fresh Herbs (Thyme, Rosemary)
- to taste Salt
- to taste Pepper
Instructions
- Place the diced potatoes and baby carrots in the crockpot.
- Add the trimmed green beans on top of the vegetables.
- In a small bowl, mix melted butter, minced garlic, fresh herbs, salt, and pepper.
- Pour the butter mixture over the vegetables in the crockpot.
- Cover and cook on low for 4 hours, or until vegetables are tender.
- Stir gently before serving.
Notes
- Feel free to add other vegetables like corn or peas.
- For a creamier dish, add a half cup of heavy cream during the last 30 minutes of cooking.
