- 1 lb Baby Carrots
- 1 lb Green Beans
- 4 medium Potatoes, diced
- 1/2 cup Butter
- 4 cloves Garlic, minced
- to taste Herbs (thyme, rosemary, parsley)
- to taste Salt
- to taste Black Pepper
Instructions
- Prepare your vegetables: wash and cut the potatoes into small cubes, trim the ends of the green beans, and peel the baby carrots if necessary.
- In a large crockpot, combine the carrots, green beans, and diced potatoes.
- Melt the butter and mix in the minced garlic, herbs, salt, and pepper.
- Pour the butter mixture over the vegetables in the crockpot. Stir to coat everything evenly.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
- Once cooked, taste and adjust seasoning if necessary before serving.
Notes
- Feel free to add other seasonal vegetables such as asparagus or corn.
- For a creamy version, you can add a can of cream of mushroom soup to the mixture.
- This dish pairs well with any main course and adds color to your Easter table.
