  • 1 leg of lamb, about 5 lbs
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 3 cups roasted vegetables (carrots, potatoes, and Brussels sprouts)
  • 1 cup asparagus, trimmed
  • 6 large eggs
  • 1 cup spinach, fresh
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh herbs (parsley, basil, or chives) for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix garlic, rosemary, olive oil, salt, and pepper.
  3. Rub the mixture all over the leg of lamb. Place it in a roasting pan.
  4. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  5. While the lamb is roasting, prepare the roasted vegetables. Toss them with olive oil, salt, and pepper, and place them on a baking sheet. Roast for the last 30 minutes of the lamb’s cooking time.
  6. Blanch the asparagus in boiling water for 2-3 minutes, then plunge into ice water. Drain and set aside.
  7. In a bowl, whisk together eggs, spinach, ricotta, Parmesan, nutmeg, and black pepper. Pour into a greased baking dish and bake at 375°F (190°C) for 25-30 minutes or until set.
  8. Once the lamb and vegetables are done, let the lamb rest for 10-15 minutes before carving.
  9. Serve the lamb with roasted vegetables, asparagus, and a slice of the baked egg dish, garnished with fresh herbs.
