Ingredients

  • 3 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 325°F.
  2. Heat olive oil in a Dutch oven over medium-high heat.
  3. Season the roast with salt and pepper, then sear on all sides until browned.
  4. Remove the roast and sauté onions, carrots, and garlic for 5 minutes.
  5. Return the roast to the pot, add broth and thyme.
  6. Cover and bake for 3 hours, adding potatoes halfway through.
  7. Check for tenderness and serve hot.
