Ingredients

- 3 lbs beef chuck roast
- 2 tbsp olive oil
- 1 large onion, chopped
- 4 carrots, sliced
- 4 potatoes, cubed
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 325°F.
- Heat olive oil in a Dutch oven over medium-high heat.
- Season the roast with salt and pepper, then sear on all sides until browned.
- Remove the roast and sauté onions, carrots, and garlic for 5 minutes.
- Return the roast to the pot, add broth and thyme.
- Cover and bake for 3 hours, adding potatoes halfway through.
- Check for tenderness and serve hot.
Notes
- For extra flavor, add a splash of red wine with the broth.
- Let the roast rest for 10 minutes before slicing.
