Description

A simple and flavorful roast chicken cooked in a dutch oven, perfect for a hearty meal.


Ingredients

  • 1 whole chicken (45 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 lemon, halved
  • 4 cloves garlic, smashed
  • 2 sprigs rosemary
  • 2 sprigs thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken with olive oil.
  4. Season with salt, pepper, garlic powder, and paprika.
  5. Stuff the cavity with lemon, garlic, rosemary, and thyme.
  6. Place the chicken in a dutch oven.
  7. Cover and roast for 1 hour.
  8. Uncover and roast for another 30 minutes until golden brown.
  9. Let rest for 10 minutes before carving.

Notes

  • Use a meat thermometer to check doneness (165°F in the thickest part).
  • Adjust seasoning to taste.
