A simple and flavorful roast chicken cooked in a dutch oven, perfect for a hearty meal.
Ingredients
Scale
- 1 whole chicken (4–5 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 lemon, halved
- 4 cloves garlic, smashed
- 2 sprigs rosemary
- 2 sprigs thyme
Instructions
- Preheat oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub the chicken with olive oil.
- Season with salt, pepper, garlic powder, and paprika.
- Stuff the cavity with lemon, garlic, rosemary, and thyme.
- Place the chicken in a dutch oven.
- Cover and roast for 1 hour.
- Uncover and roast for another 30 minutes until golden brown.
- Let rest for 10 minutes before carving.
Notes
- Use a meat thermometer to check doneness (165°F in the thickest part).
- Adjust seasoning to taste.
- Leftovers can be stored for up to 3 days.
