Ingredients

  • 3 lbs chuck roast
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Season the chuck roast with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat.
  4. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove and set aside.
  5. Add onion, carrots, celery, and garlic to the pot. Cook until softened, about 5 minutes.
  6. Stir in tomato paste, thyme, and rosemary.
  7. Return the roast to the pot and pour in beef broth.
  8. Cover and transfer to the oven. Cook for 3 hours until the meat is tender.
  9. Remove from the oven and let rest for 10 minutes before serving.
