Description

These Dried Apricot Bliss Bites are the perfect snack for a quick energy boost. Packed with the natural sweetness of dried apricots, nuts, and coconut, they are easy to make and delicious!


Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup mixed nuts (almonds, walnuts, cashews), roughly chopped
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the chopped dried apricots, mixed nuts, and shredded coconut.
  2. In a small saucepan over low heat, combine the honey (or maple syrup), vanilla extract, and salt. Stir until warm and well mixed.
  3. Pour the warm mixture over the dried apricot and nut mixture. Stir until everything is well coated.
  4. Line an 8×8 inch baking dish with parchment paper. Transfer the mixture into the dish and press down firmly with a spatula to create an even layer.
  5. Refrigerate for at least 1 hour to set.
  6. Once set, lift the mixture out of the dish using the parchment paper. Cut into bite-sized squares or bars.
  7. Store in an airtight container in the fridge for up to 1 week.

Notes

  • Feel free to substitute the mixed nuts with your favorite nuts or seeds.
  • For a chocolatey twist, add mini chocolate chips or cacao nibs to the mixture.
  • These bites can also be rolled into balls instead of pressed into a dish for a different shape.
