These Dried Apricot Bliss Bites are the perfect snack for a quick energy boost. Packed with the natural sweetness of dried apricots, nuts, and coconut, they are easy to make and delicious!

- 1 cup dried apricots, chopped
- 1 cup mixed nuts (almonds, walnuts, cashews), roughly chopped
- 1/2 cup unsweetened shredded coconut
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the chopped dried apricots, mixed nuts, and shredded coconut.
- In a small saucepan over low heat, combine the honey (or maple syrup), vanilla extract, and salt. Stir until warm and well mixed.
- Pour the warm mixture over the dried apricot and nut mixture. Stir until everything is well coated.
- Line an 8×8 inch baking dish with parchment paper. Transfer the mixture into the dish and press down firmly with a spatula to create an even layer.
- Refrigerate for at least 1 hour to set.
- Once set, lift the mixture out of the dish using the parchment paper. Cut into bite-sized squares or bars.
- Store in an airtight container in the fridge for up to 1 week.
Notes
- Feel free to substitute the mixed nuts with your favorite nuts or seeds.
- For a chocolatey twist, add mini chocolate chips or cacao nibs to the mixture.
- These bites can also be rolled into balls instead of pressed into a dish for a different shape.
