Ingredients

  • 2 cups of mixed vegetables
  • 1 cup of quinoa
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 cup of chickpeas

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and 2 cups of water.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a pan, heat olive oil over medium heat.
  5. Add mixed vegetables and sauté for 5 minutes.
  6. Add chickpeas and cook for another 5 minutes.
  7. Mix vegetables with cooked quinoa.
  8. Season with salt and pepper.
  9. Serve warm.

  • Store leftovers in the fridge for up to 3 days.
