Description

Golden, Healing & Incredibly Comforting soup made with turmeric and lentils, perfect for detoxing.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1 cup dried green or brown lentils, rinsed
  • 6 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent, about 5 minutes.
  2. Stir in garlic, carrots, and celery, cooking for another 5 minutes until vegetables are tender.
  3. Add turmeric, cumin, coriander, and smoked paprika. Stir and cook for 1 minute until fragrant.
  4. Add lentils and vegetable broth. Bring to a boil, then reduce heat to a simmer. Cook uncovered for 25-30 minutes until lentils are tender.
  5. Stir in coconut milk and cook for an additional 5 minutes. Season with salt and pepper.
  6. Remove from heat and add lemon juice.
  7. Serve hot, garnished with fresh cilantro.
