Golden, Healing & Incredibly Comforting soup made with turmeric and lentils, perfect for detoxing.
Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1 cup dried green or brown lentils, rinsed
- 6 cups vegetable broth
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent, about 5 minutes.
- Stir in garlic, carrots, and celery, cooking for another 5 minutes until vegetables are tender.
- Add turmeric, cumin, coriander, and smoked paprika. Stir and cook for 1 minute until fragrant.
- Add lentils and vegetable broth. Bring to a boil, then reduce heat to a simmer. Cook uncovered for 25-30 minutes until lentils are tender.
- Stir in coconut milk and cook for an additional 5 minutes. Season with salt and pepper.
- Remove from heat and add lemon juice.
- Serve hot, garnished with fresh cilantro.
