Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 cup red lentils, rinsed
  • 6 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped kale or spinach
  • Juice of 1 lemon
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  2. Add the minced garlic, cumin, coriander, cinnamon, and cayenne pepper (if using). Stir and cook for an additional 2 minutes until fragrant.
  3. Stir in the diced tomatoes, red lentils, vegetable broth, salt, and black pepper. Bring to a boil.
  4. Reduce heat and let it simmer for about 25-30 minutes or until lentils are tender.
  5. Add the chopped kale or spinach and cook for another 5 minutes until wilted.
  6. Remove from heat, stir in the lemon juice, and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh cilantro or parsley.

Notes

  • For extra flavor, add a bay leaf while simmering and remove before serving.
  • You can substitute red lentils with green or brown lentils, but adjust cooking time as needed.
