Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (14 oz) diced tomatoes
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chopped kale or spinach
- Juice of 1 lemon
- Fresh cilantro or parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Add the minced garlic, cumin, coriander, cinnamon, and cayenne pepper (if using). Stir and cook for an additional 2 minutes until fragrant.
- Stir in the diced tomatoes, red lentils, vegetable broth, salt, and black pepper. Bring to a boil.
- Reduce heat and let it simmer for about 25-30 minutes or until lentils are tender.
- Add the chopped kale or spinach and cook for another 5 minutes until wilted.
- Remove from heat, stir in the lemon juice, and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro or parsley.
Notes
- For extra flavor, add a bay leaf while simmering and remove before serving.
- You can substitute red lentils with green or brown lentils, but adjust cooking time as needed.
