Ingredients

- 1 cup lentils
- 4 cups vegetable broth
- 2 cups fresh spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and minced garlic, sauté until soft.
- Add curry powder and cumin, stir for 1 minute.
- Add lentils and vegetable broth, bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender.
- Add fresh spinach and cook for another 5 minutes.
- Season with salt and pepper, serve hot.
Notes
- Store leftovers in the fridge for up to 3 days.
- Can be frozen for up to 2 months.
- Add more spices for a spicier soup.
