- 2 large cucumbers, sliced
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons vinegar
- Salt to taste
- Pepper to taste
Instructions
- Wash and slice the cucumbers.
- Diced the bell pepper and thinly slice the red onion.
- In a bowl, combine cucumbers, bell pepper, red onion, and parsley.
- In a separate bowl, whisk together olive oil, vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.
