Description

Crunchy oven-baked chicken taquitos served with grilled asparagus for a delicious and easy meal.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 10 small flour tortillas
  • 1 tbsp olive oil
  • 1 bunch asparagus
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix chicken, cheese, salsa, cumin, garlic powder, and salt in a bowl.
  3. Place 2 tbsp of filling on each tortilla and roll tightly.
  4. Place taquitos seam-side down on a baking sheet and brush with olive oil.
  5. Bake for 15-20 minutes until crispy.
  6. Toss asparagus with olive oil, salt, and pepper.
  7. Grill asparagus for 5-7 minutes until tender.
  8. Serve taquitos with grilled asparagus.
