Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows (optional)
  • 1/2 cup chopped pecans (optional)

Instructions

  1. In a large bowl, combine the sweet potatoes, brown sugar, granulated sugar, melted butter, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt.
  2. Mix until well combined and the sweet potatoes are mostly mashed.
  3. Transfer the mixture to a greased crockpot.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the sweet potatoes are tender.
  5. If using, add mini marshmallows and chopped pecans on top in the last 30 minutes of cooking, covering to allow the marshmallows to melt.
  6. Serve warm and enjoy!
