A delicious and easy sweet potato casserole made in a crockpot, perfect for holidays or family gatherings.
Ingredients

- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup mini marshmallows (optional)
- 1/2 cup chopped pecans (optional)
Instructions
- In a large bowl, combine the sweet potatoes, brown sugar, granulated sugar, melted butter, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt.
- Mix until well combined and the sweet potatoes are mostly mashed.
- Transfer the mixture to a greased crockpot.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the sweet potatoes are tender.
- If using, add mini marshmallows and chopped pecans on top in the last 30 minutes of cooking, covering to allow the marshmallows to melt.
- Serve warm and enjoy!
