Delicious and easy-to-make side dishes using a crockpot.
Ingredients

- 2 cups of diced potatoes
- 1 cup of chopped carrots
- 1 cup of green beans
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 teaspoon of dried thyme
- 1 cup of vegetable broth
Instructions
- Prepare all vegetables by washing and chopping them.
- In the crockpot, combine the potatoes, carrots, green beans, onion, and garlic.
- Add olive oil, salt, pepper, and thyme to the vegetables.
- Pour vegetable broth over the mixture.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir before serving.
Notes
- Adjust seasoning to taste.
- You can add other vegetables as desired.
- This dish pairs well with grilled meats.
