Ingredients

  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 1 cup spinach or kale, chopped (optional, for serving)
  • Juice of 1 lemon (for serving)

Instructions

  1. In a large crockpot, add the lentils, onion, carrots, celery, garlic, diced tomatoes (with juice), vegetable broth, cumin, smoked paprika, turmeric, salt, and pepper.
  2. Stir to combine all the ingredients well.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the lentils are tender.
  4. If using, stir in the spinach or kale during the last 10 minutes of cooking.
  5. Taste and adjust seasoning if necessary.
  6. Serve warm with a squeeze of fresh lemon juice on top.
