- 1 cup dried green or brown lentils, rinsed
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, with juice
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 1 cup spinach or kale, chopped (optional, for serving)
- Juice of 1 lemon (for serving)
Instructions
- In a large crockpot, add the lentils, onion, carrots, celery, garlic, diced tomatoes (with juice), vegetable broth, cumin, smoked paprika, turmeric, salt, and pepper.
- Stir to combine all the ingredients well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the lentils are tender.
- If using, stir in the spinach or kale during the last 10 minutes of cooking.
- Taste and adjust seasoning if necessary.
- Serve warm with a squeeze of fresh lemon juice on top.
Notes
- Feel free to add your favorite vegetables or spices to customize the soup.
- This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
