A flavorful and tender crockpot chuck roast that’s easy to make.
Ingredients

- 3–4 pounds chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
Instructions
- Heat olive oil in a pan over medium heat.
- Brown the chuck roast on all sides.
- Place the chopped onion and minced garlic in the crockpot.
- Add the browned roast on top of the onion and garlic.
- Layer the carrots and potatoes around the roast.
- Pour beef broth and Worcestershire sauce over the roast and vegetables.
- Season with salt, pepper, thyme, and rosemary.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check for tenderness before serving.
Notes
- Adjust seasoning to your taste.
- You can add other vegetables like celery or parsnips.
- Leftovers can be stored in the fridge for up to 3 days.
