Ingredients

  • 2 lbs chicken breast
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 8 taco shells
  • 1 cup shredded cheese
  • 1/2 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Place chicken in the crockpot.
  2. Add taco seasoning and salsa over the chicken.
  3. Add black beans and corn on top.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Shred the chicken with two forks in the crockpot.
  6. Serve in taco shells and top with cheese and cilantro.
  7. Squeeze lime juice over the tacos before serving.

Notes

  • Adjust spice level by adding jalapeños if desired.
  • You can use frozen chicken breasts directly in the crockpot.
