Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups chopped vegetables (carrots, celery, onion)
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 bay leaf
  • Salt to taste
  • 1 cup frozen peas
  • 2 cups egg noodles

Instructions

  1. Add chicken breasts to the crockpot.
  2. Pour in the chicken broth.
  3. Add chopped vegetables, garlic powder, thyme, black pepper, bay leaf, and salt.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Remove chicken, shred it, and return to the pot.
  6. Add frozen peas and egg noodles, then cook for an additional 30 minutes.
  7. Serve hot.

  • Store leftovers in the fridge for up to 3 days.
  • Freeze soup for up to 3 months.
  • Add more broth for a thinner consistency.
