Description
A comforting and hearty chicken noodle soup made in a crockpot.
Ingredients

- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Place the chicken in the crockpot.
- Add the chicken broth, carrots, celery, onion, garlic, thyme, salt, and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Remove the chicken, shred it, and return it to the pot.
- Add the egg noodles and cook for an additional 30 minutes on high.
- Stir in the fresh parsley before serving.
Notes
- Adjust the seasoning to taste.
- For a thicker soup, add more noodles.
- Store leftovers in the refrigerator for up to 3 days.
