Description

A hearty and comforting crockpot chicken noodle soup.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 6 ounces egg noodles
  • Salt and pepper to taste

Instructions

  1. Place chicken in the crockpot.
  2. Add chicken broth, water, carrots, celery, onion, garlic, thyme, parsley, and bay leaf.
  3. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken and shred it, then return to the soup.
  6. Add egg noodles and cook for an additional 30 minutes on high.
  7. Stir and serve hot.

  • Store leftovers in the fridge for up to 3 days.
