Ingredients

- 4 boneless chicken breasts
- 1 cup of long grain white rice
- 2 cups of chicken broth
- 1 cup of frozen mixed vegetables
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Place chicken breasts in the crockpot.
- Add chopped onion and minced garlic on top of the chicken.
- Pour in the chicken broth and add salt, pepper, and paprika.
- Add the rice and frozen vegetables on top.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Shred the chicken before serving and mix everything well.
Notes
- For extra flavor, add herbs like thyme or rosemary.
- You can substitute brown rice, but adjust cooking time.
