  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides, then transfer to the crockpot.
  2. Add carrots, potatoes, onion, and garlic to the crockpot.
  3. In a bowl, mix together beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over the beef and vegetables in the crockpot.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until beef is tender.
  5. If you prefer a thicker stew, mix cornstarch with water in a small bowl until smooth. Stir into the stew during the last 30 minutes of cooking.
