- 2 pounds beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides, then transfer to the crockpot.
- Add carrots, potatoes, onion, and garlic to the crockpot.
- In a bowl, mix together beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over the beef and vegetables in the crockpot.
- Cover and cook on low for 8 hours or on high for 4 hours, until beef is tender.
- If you prefer a thicker stew, mix cornstarch with water in a small bowl until smooth. Stir into the stew during the last 30 minutes of cooking.
