- 4 pounds corned beef brisket
- 4 cups beef broth
- 1 onion, quartered
- 4 carrots, cut into chunks
- 4 potatoes, quartered
- 2 cloves garlic, minced
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef in the crock pot.
- Add the beef broth, onion, carrots, potatoes, garlic, mustard seeds, peppercorns, and bay leaves.
- Cover and cook on low for 8-10 hours or until tender.
- Remove the corned beef from the pot and slice against the grain.
- Serve with vegetables and broth.
Notes
- For extra flavor, add a splash of apple cider vinegar.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This dish pairs well with mustard or horseradish.
